Elizabeth's Rustic Minestrone Soup - Perfect for warming the soul and body on a crisp fall day.

Ingredients:
1# Tomatoes-washed, ends removed, & medium diced
4 Cups Vegetable Stock
3 Cups Tomato Juice
1 Carrot-washed, peeled & small diced
2 Cups Celery-washed & small diced
1 White Onion- small diced
1 Red Bell Pepper-small Diced
2 Tbs. Sliced Garlic
1 Sprig Rosemary
2 Bay Leaves
Pinch Crushed Red Pepper
S & P to taste .. Season as you make the soup, but be careful not to over salt.
3 Cups Spinach- chopped
1/2 Cup White Wine
3 Each Zucchini - washed, ends removed & diced
1 Large Eggplant - washed, ends removed & diced
1# Lentils - cooked - or chick peas, white bean or a combination of any
1⁄2 Cup White Wine
1/2 Cup Pesto—leave out if going for a vegan option
1 Cup Parmesan-optional
2 Cups Green Beans-optional


Recipe:
1. Heat olive oil in pan over medium heat, add onions, caramelize slightly and then add celery,
carrot, red pepper & garlic; sweat 2-3 minutes. Season with salt & pepper and crushed red
pepper.
2. Add tomato, eggplant and zucchini and cook for 5 minutes, deglaze with white wine and reduce
by half. Put rosemary and bay leaves in.
3. Add tomato juice and vegetable stock and cook until vegetables are tender.
4. Add cooked lentils, chopped spinach, and pesto; cook an additional 5 minutes. Taste and add
more salt and pepper if needed. (This is also when you would add your green beans if available
and you want to)
5. Top with parmesan and serve; goes well with Rustic Country Bread.
